These cookie dough bars combine the nostalgic crunch of Malt-O-Meal Marshmallow Mateys cereal with rich, buttery cookie dough for a no-bake treat that’s sweet, chewy, and packed with marshmallow magic.
Ingredients
Crust
- 3 cups Malt-O-Meal Marshmallow Mateys cereal (no marshmallows)
- ¼ cup sugar
- 1 stick unsalted butter, melted
Cookie Dough
- 1 ½ cups Malt-O-Meal Marshmallow Mateys cereal marshmallows (no cereal)
- 1 cup sugar
- 2 cups flour
- 1 ½ sticks unsalted butter, softened
- ¼ teaspoon vanilla extract
- ¼ cup milk
Frosting
- ½ stick unsalted butter, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- ⅛ teaspoon salt
- ¾ cup Malt-O-Meal Marshmallow Mateys cereal marshmallows (no cereal)
Instructions
Crust
- Combine cereal (no marshmallows) and sugar in a food processor.
- Add melted butter, process until combined into a crust texture, then spread evenly in a foil-lined 8" × 8" pan.
- Freeze for 30 minutes.
Cookie Dough
- Cream butter and sugar until fluffy.
- Add vanilla and salt, then slowly mix in flour until dough forms.
- Mix in marshmallows until combined, then layer evenly on top of crust in pan.
Frosting
- Beat butter and powdered sugar until combined, then mix in vanilla and salt, then marshmallows.
- Spread evenly on top of cookie dough layer in pan.
- Cut into squares and store in airtight container.
